Site Full sun or light shade.
Soil Rich, moist and deeply dug.
Propagation Sow from spring to late summer. For fast germination: soak seeds overnight in warm water, pour boiling water in drill before sowing or grow in seed tray and maintain 70 degree F. Self seeds.
Growing Thin or transplant to 9" apart. Protect in cold wether. Grows well indoors.
Harvesting Pick leaves during first year. Collect seeds when ripe. Dig up roots in autumn of second year.
Preserving Dry or freeze leaves. Dry or blanch and freeze roots.

Uses
Culinary
  • Leaf - Add raw to salads. Finely chop and sprinkle over sandwiches, egg dishes, vegetable soups, fish and boiled potatoes. When cooked parsley enhances other flavors, but add towards end of cooking time.
  • Root - Use in bouquet garni. Add to soups and stews. Boil as a root vegetable. Grate raw into salads.
  • Household
  • Whole plant - Grow by roses to improve their health and scent.
  • Cosmetic
  • Leaf - Infuse as a hair tonic and conditioner. Add to facial steam and lotion for dry skin and to minimize freckles. Use infusion as a soothing eye bath.
  • Medicinal
  • Leaf - Chew raw to freshen the breath and promote healthy skin. Infuse for digestive tonic. Use in a poultice as an antiseptic dressing for sprains, wounds and insect bites.
  • Root - Decoct for kidney troubles and as a mild laxative. Apply juice to reduce swellings.
